Established in 1846 near Port Askaig on Islay by Hector Henderson, Caol Ila means “Sound of Islay” in Gaelic. A fresh water supply was one reason for its siting and water has been important in many ways, ever since - a waterfall supplied power for the barley hoists and pressure for the fire hydrants. Today, a novel heat exchanger uses the sea to cool hot process water before returning it to the condensers, which for many years all supplies arrived and casks departed by sea, on a small coaster called the Pibroch. Caol Ila has been regularly globally awarded at the most prestigious events, since 2002.
The DISTILLERS EDITION is a collection of master-craftsmanship. Each cask in the series is individually selected and perfectly matched to the character of each of the single malts refined here. The two-parted maturation process gives more depth and complexity, which is the idea behind the limited DISTILLERS EDITION: preserving the perfection of the single malts that have already been awarded for their outstanding flavours. The selected taste nuances are more strongly accentuated in a way that is not found in the regular bottlings, but with fully maintaining the original character of these fine single malts.
SCOTLAND'S FINEST - Since 1997, the Distillers Editions have been an annual release of limited quantities, each very much true to its origins yet possessing a rich depth, complexity and nuance of flavour not found in the regular release. This excellent Caol Ila whisky has been firstly matured in Refill American and European Oak casks. With the second maturation finished in Moscatel-seasoned, re- charred American Oak with heavily recharred new AO ends.
PURE FLAVOUR - This golden edition of Caol Ila is brilliant, crisp and refined. The deep, sweet and smoky flavour profile reflects the intense, saturated colours of late afternoon sunshine after a storm has passed. The distillers edition of Caol Ila is richer and more intensely layered than the original expression, whilst remaining true to the distilleries crisp character. A rich texture from the sweet moscatel seasoned casks brightens the concentrated smoke, carefully balancing sweetness and body.
TASTING NOTES
COLOUR: Pale gold with green lights. Fine beading. Good viscosity.
BODY: Medium.
NOSE: Forward and immediately smoky-spicy, opening up to reveal Caol Ila’s trademark fresh clean notes. Once they appear, it’s as if someone has just put the bonfire out by throwing water on it. There is fruit too, subdued by comparison.
PALATE: Firm and oily-smooth in texture, the taste sweet and mouth coating to start, with a full smoky attack on the palate, and intensely flavourful in nature. This concentrated smokiness is well balanced by sweetness, body and light-wood spice.
FINISH: Long, smoky and robust; delightfully palate warming and spicy.

Click & Collect
When you come to pick up your order, you must bring your order reference number (printed version/text message/email) as well as proof of ID (acceptable forms of ID include the payment card you used to pay for the order; passport; or photocard driving licence). If you paid with Paypal, you must bring your passport or photocard driving licence. Please note that you cannot collect your order until we have seen your proof of ID.
Standard Delivery
Our standard deliveries are made during normal business hours, Monday to Friday; to ensure prompt delivery, someone must be present to sign for the parcel. Any orders placed after 11am on Friday will be sent on the following Monday using a standard 48hr service, for delivery on Wednesday. If in doubt, please contact us at info@thespiritsembassy.com
After processing, (which may be subject to delay if we are out of stock of any items ordered, in which case we will notify you), all orders are despatched using a 48-hour service to most mainland destinations in the UK. For international orders, delivery times vary depending on location. Delivery charges are calculated based on the weight of the product (based on 700ml bottle) and the destination address. Depending on stock availability and the size of your order it may be split and sent in separate parcels arriving at different times.
Please note our couriers do not work bank holidays.
Level of Service:
Please note that we are unable to guarantee the punctuality of service provided by our delivery agents, particularly during spells of difficult weather conditions. If your shipment is delivered unacceptably late after having been collected from us on time by our agent, we will try to secure a P&P refund where appropriate.
Damaged Parcels:
We take pride in packing your order to ensure that it arrives in perfect condition. Unfortunately, there are times when parcels incur damage while in transit. If a parcel shows clear signs of damage or leakage at the time of delivery, we ask that you refuse the parcel. Please ask the courier to return the goods to sender.
Additional Charges and Conditions:
- all orders are insured by us at no extra charge up to a value of £500. Orders of value.
We are happy to delivery your order to an address that is different to your normal billing address. To do this, simply enter the desired delivery address during the checkout process.
We can also deliver your order to your permanent place of employment as long as there is someone who is able to receive and sign for the delivery on your behalf.
