The Octave range is where the finest whiskies have a final maturation in ex sherry octave casks, the spirit is invigorated by the increased wood contact in the smaller casks, bringing you a spectacular dram.
This whisky is from Dumbarton a stunning lowland dead grain distillery. The Dumbarton Premium Octave cask #10037719 has aged for 35 years in oak casks then spent the final months in an octave cask. This is a limited release of only 80 bottles. This is a single cask, bottled in 2022 at cask strength of 49.4%, not chill-filtered or coloured.
For many years, Duncan Taylor Scotch Whisky Limited has experimented in the use of differing cask sizes for the maturation of single malt and single grain scotch whiskies. This research stemmed from the simple premise that there is more interaction between the wood and spirit over a shorter period of time in a small cask than in a large cask, allowing a faster melding of wood, air and alcohol. The spirit in this bottle is an exclusive example of good whisky taken beyond all expectations to become rich, complex and wise beyond its years; it has been 'Octave Invigorated'
Tasting Notes
Colour - Old Sauternes.
Nose - Quite shy at first. Soft Oloroso sherry notes mixed with gentle floral notes of freesias and roses. Cedar wood pencil shavings. Flambe banana on top of cream brulee, sweet but tangy.
Palate - Big, bold, mouth coating texture, with buttersscotch and custard crea biscuits. Strong sherry, honey comb and stem ginger. A touch of oaky spice and a touch of anise. Then a slab of french Montelimar nougat pops up. The fruit is more on baked apple and pear than the tropical nose.
Finish - Great length with more toasted oak. Cinnamon spice with a little white pepper. A touch of liquorice at the end with the fruits persisting. Great balance and finesse. Long and rich, full of umami. The richness of the sherry is beautifully balanced with some bright mineral notes, and the residual sweetness is offset by the gentle spice.
