If you have an interest in science or are a fan of the sweeter and smokier variety of whisky then this one is worth a try and only the second whisky to be released from this little known distillery. Ailsa Bay Distillery is situated on the west coast of the Lowlands and belongs to William Grant & Sons, who also own distilleries such as Glenfiddich, Balvenie and Kininvie. This release shows micro maturation at its best and has been scientifically distilled at 022 parts peat, 019 parts sweet then micro matured for a precise balance of sweet and smoky notes.
Tasting Notes
Nose – Fresh wood smoke with notes of smouldering damp heather and an extinguished bonfire, following the smoke is a wave of oaky sweetness and vanilla oak with hints of candied orange peel.
Palate – Beautifully balanced peat, rich vanilla oakiness, smoke, fruit and creamy toffee.
Finish – An intriguing balance of oaky sweetness and peaty dryness.
