When a small parcel appeared last year we took them, and then did the thing that makes a cask finish worth doing at all: we filled them with some of our oldest whisky rather than our youngest.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThat spirit went into first-fill bourbon casks in 2014 and stayed there for eleven years, maturing slowly in seaside warehouses on the Caithness coast where the temperature barely moves from one season to the next. The Madeira casks took it for its final year. Long enough for the wood to say something. Short enough that it does not shout over the spirit.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhat you get is Wolfburn with another layer. The orchard fruit and soft richness of the house style still sitting underneath, with dried fruit, sultana, orange marmalade and toffee laid over the top, and a long warming finish with dark caramel at the end of it.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eEverything that makes Wolfburn distinctive is in this bottle: Caithness water, copper pot stills, seaside warehouse maturation, and twelve years of patience.
