The Octave™ Premium Range showcases years of maturation expertise transforming some of Scotland's oldest and rarest whiskies into gently expanded and more sophisticated forms. These rare and exceptional whiskies are presented in luxury packaging befitting their provenance and are limited in numbers. Tormore 1995 23 year old is one of the first eight releases in this stunning range. These premium Octave™ whiskies have been held in sherry casks to intensify their flavours and add a new dimension to their flavour profiles, bringing out the very best in each rare dram. Bottled at cask strength there was 87 bottles created of this stunningly presented whisky. Octave™ casks are approximately 1/8th the size of a butt and each one creates around 80 to 100 bottles. Duncan Taylor Scotch Whisky, who trademarked The Octave™ name over 15 years ago, have now increased their portfolio to over 45 different Octave™ whiskies and are selling them in 50+ countries.
Tasting Notes
Nose - Mountain fresh, piney, herbal and grassy. Spicy fresh green olive oil. Over time, the sherry comes forward with darker treacle.
Taste - Much fruitier than on the nose with bright lime citrus. Herbs still there with lively Thai basil and fresh mojito style mintiness, drizzled with a honey rosemary marinade.
Finish - Medium to long with an initial hint of fresh pepper before the citrus reasserts itself. Juicy oak with a saline hint.
