The taste of each Caol ila matches a special aspect of the light at this remote distillery, tucked in a secret cove on the Sound of Islay. This one has a unique freshness and clarity, like a clearing sky after rain. Most Caol ila is peated, but once a year a little is made from unpeated barley. While it's still an Islay malt, blenders call it Highland 'style'. Fifteen years ago some of it was reserved and matured in refill American and European Oak casks, to make this highly unusual, unpeated Islay single malt.
Tasting Notes
Nose - Fresh and clean, with apples and soft toffee and a touch of citrus.
Palate - Spirited and sweet, with sharp fruit, malt and toffee.
Finish - Powerful and warming
